QUICK AND EASY MEALS
Minimize your meal prep and save time on kitchen cleanup with the one-pot, sheet-pan, electric-pressure-cooker, and slow-cooker recipes in this chapter. No-fuss, simplified cooking techniques can be lifesavers during busy weeks, and these recipes typically double and freeze easily, require minimal ingredients, and use familiar methods. Even better—most have a cook time of 30 minutes or less.
In other words, these are the dishes you’ll come back to again and again for weeknight meals, and any other time you want to get dinner on the table quickly without sacrificing flavor. These are also really forgiving recipes: you can easily modify the ingredients or substitute with what you have on hand if you’re facing hungry mouths and don’t have exactly what you need in the pantry.
If some of these dishes sound like food you usually order in, that’s deliberate! It’s difficult to compete with the allure of takeout, which is why I’ve designed these recipes to come together in the amount of time it would take you to read a menu, make a call, and wait for delivery. And this way, you know exactly what’s going into your dinner, and your body.
If you’re really feeling ambitious, set aside one day at the beginning of the month to prep the ingredients for multiple meals. Double or triple a recipe and store the uncooked ingredients for each individual meal in a resealable plastic bag. If a recipe calls for browning the meat first, go ahead and brown it, then let it cool to room temperature before putting it and its juices in the bag. Store the bags in the freezer for up to four months. Remove the bag from the freezer the day before you want to cook it and let the contents defrost in the fridge, then let the slow cooker or electric pressure cooker do the work for you. I love to prep meals like this for Ryan and the kids when I’m traveling, or when I know we have a hectic week coming up and I won’t have time to plan dinner. It’s so convenient, and it beats going out to eat.
